1. Begin by warming a pan up on medium-low heat (~7-10 minutes) to cook your bacon. While this is heating, take a separate bowl and whisk eggs together and slice your bagel in half. You may also omit this remark if you like your eggs another way.
2. Place gently and fry the bacon to the desired crispness and remove from the pan. Do not overcrowd the pan/skillet as it will take longer for the bacon to cook.
3. Drain the excess grease from the bacon and wipe clean. Take 1-2 tablespoons of oil and coat your pan. Staying on the same heat place eggs in the pan. If you’re scrambling them, use a rubber spatula to keep the egg moving around. Otherwise fry you egg as you please, ie sunny, over easy, etc.
4. Salt and pepper your eggs to taste and finish cooking the eggs. For scrambled eggs, you’re looking for no runny egg remaining. You can tell this by the egg clumping up and forming folds in it.
5. Place your cheese on top of the egg and set off the eye. Mayo your bagel, place your bacon, and then slide the egg on top of the bacon and crown you’re glorious sandwich.
All that’s left is pour a nice cup of coffee and or tea to enjoy!
